The problem
Yeast, baking powder, and baking soda are what makes your dough rise, but what is actually the difference between them, and when do you use what?
The fix
- **Baking soda** chemically reacts to any acid.
- **Baking powder** is baking soda with a dry acid mixed in, called cream of tartar. It reacts when you add liquid to it.
- **Yeast** is a living microorganism that eats sugar and poops out gases, that's what creates that lovely texture in your baked goods.
They all create a somewhat similar effect, but they differ in how they work, how long they take to be effective, and how they change the taste of the end product. Next time you don't know which one to pick, refer back to this.
