I started this channel while I still had a 9-to-5, so every recipe began as dinner after work, me trying to put my culinary school training to use on normal weeknight food.

Food runs in the family. My mom loved to eat, my dad and grandpa ran restaurants, and at 18 I had my own bistro. Add two culinary schools and a lot of plane tickets booked around meals, and that is how I learned that great cooking is not about perfection. It is about good ingredients and solid technique.

I test every recipe until it works. Then I tell you exactly what I did, the good moves and the bad calls, and the small details that matter.

What I believe in the kitchen

  • Ingredients, technique, love

    Great food is not complicated. Good ingredients, solid technique, and a bit of love.

  • Taste, taste, taste

    Salt, acid, sweetness, heat. Balance those four and your dish gets so much better.

  • Dare to try

    If a dish flops, give it three shots before you write it off. Usually it's your own head getting in the way.

  • Two ways to cook

    Sometimes you go all out on ingredients and technique. Sometimes it needs to be fast, easy, and cheap, and still very delicious. Both count.

  • Feed the body and the soul

    Eating healthy matters. So does eating something that makes you happy. Feed both.
