Kitchen tip,
Should you refrigerate your eggs?
Fridge or counter? It depends where you live, US eggs are washed, European eggs aren't. Plus the water test for freshness.

The problem
Do you store your eggs in the fridge or at room temperature? It actually depends on where you live.
The fix
In the US, eggs get washed, which removes the cuticle, a protein layer that protects the egg. So in the US, keep your eggs in the fridge; left out, they can cause salmonella.
In Europe, washing eggs is illegal, so you can better leave them out of the fridge. In the fridge there's a chance they grow mildew (basically mold), and you guessed it, that causes salmonella too.
Bonus check for freshness: dunk the egg in water. If it lays flat on the bottom, it's still fresh. If it floats to the surface, it's rotten, don't eat it.
