How to Make Sure Your Dough Will Rise

Cold kitchen, flat dough? Warm your oven for 20 seconds with the light on, or park the dough somewhere steamy like above a water bath.

The problem

One of the most important steps in any yeast dough recipe is letting the dough rise, but the dough needs a warm environment, and that can be tough to find when you live in a cold climate. Here's how to make dough rise in a cold house.

The fix

- Turn on your oven for 20 seconds, then leave just the light on. That raises the air temperature enough for a comfy rise. - Or leave the dough somewhere that traps heat and steam: above a water bath, or in a steamy shower.
