Foolproof Sous Vide Steak
This is the foolproof method for a perfect steak every single time. Grab any steak, I have a nice côte de boeuf here, give it a bath, then a hard sear. Please never mess up your steak again.
Ingredients
- 1 steak (any cut, I used a côte de boeuf)
- a few sprigs fresh herbs
- a knob butter, for basting
- to season salt and pepper, generously
Method

Pat the steak dry and season it generously with salt and pepper.

Add the steak and some herbs to a vacuum-sealed bag, or use a Ziploc bag and press out the air by submerging it in water.

Heat your water bath to 54°C (130°F) and bathe the steak for 2 hours for juicy medium rare. Want medium? Do 60°C (140°F).

Cool it in the fridge for another hour, or until you're ready to eat.

Take it out of the fridge 30 minutes before searing.

Get a cast-iron pan ripping hot and sear the steak 30 seconds on each side.

Baste it with some lovely butter. Perfectly done steak.
