How to Roast Any Vegetable
This is so easy, and in my opinion the most delicious way to prepare any vegetable. Great as a side dish for any dinner, or just to eat on its own.
Ingredients
- vegetables of your choice (I used broccoli, Brussels sprouts, cauliflower and carrots)
- 3–4 tbsp olive oil
- optional extra spice or topping (I used ras el hanout, curry powder and honey)
- some salt and pepper
Method

Cut your vegetables into bite-sized chunks, cut them, halve them, do it the Japanese way if you like.

Add a good amount of olive oil (I added around 3–4 tablespoons here) plus some salt and pepper.

Roast them plain, or get creative with any additional spice or topping. I kept the broccoli plain, added ras el hanout to the Brussels sprouts, curry powder to the cauliflower and honey to the carrots.

Spread them on a baking tray and roast at 230 °C for 20 minutes, but it depends on your veggies: some are done in 10, some in 15, some need the full 20.

Or air fry them for 40 minutes at 200 °C, if you have one.
