Homemade Oven Sun-Dried Tomatoes: Worth It?

Making your own sun-dried tomatoes at home, is it actually worth it? You need one kilo of Roma tomatoes, salt and olive oil, plus a free afternoon while the oven does the work.
Ingredients
- 1 kg Roma tomatoes
- some olive oil
- some herbs to your liking (I used dried thyme)
- some salt
Method
- 1
Cut out the stem of each tomato and score an X on the bottom.

Bring water to a boil and blanch the tomatoes for 15 seconds.

Get an ice bath ready and put your tomatoes straight in, the easiest peeling method there is.

Peel the tomatoes, cut each one in half and remove the seeds.

Line them up on a baking sheet and add the oil, salt and some herbs to your liking, I used thyme.

Bake in the oven for up to 4–6 hours at 120 °C.
