Oven-Baked Soy Chicken Sandwich
This oven baked chicken sandwich is one I can eat every day. Chicken thighs go into a soy-sambal-garlic marinade, bake for 25 minutes, and the pan juices go straight into the sauce. Look at that juice.
Ingredients
- chicken thighs chicken thighs
- 2 tbsp soy sauce
- 1 tbsp sambal oelek (garlic hot sauce)
- 2 tsp minced garlic
- 1 tsp vinegar
- 3 tbsp mayo
- 1 tbsp sriracha
- 1/2 tsp soy sauce
- a splash juices from the baked chicken
- 1 per serving bun of your choice
- a few slices dill pickles
- a few leaves gem lettuce
- a few slices tomato, salted

In a bowl, add the chicken thighs, soy sauce, sambal oelek, minced garlic and vinegar. Mix and marinate for 1 hour, up to overnight.

Spread the thighs on a sheet pan and bake for 25 minutes at 200°C (390°F).

While the chicken roasts, toast your bun, slice the tomatoes and make sure to salt them, slice the dill pickles and pick a few gem lettuce leaves.

For the sauce, mix the mayo, sriracha and soy sauce. Once the chicken is ready, add some of the pan juice to the sauce.

To assemble: bottom bun, sauce, lettuce, tomato, the juicy chicken, dill pickles, more sauce, and crown it with the top bun.
