This is authentic miso soup, super healthy, nutritious, and my most favorite soup for lunch. You only need to do a few things, and there's one rule that matters: don't boil it once the miso is in.
Ingredients
- 200 ml dashi, homemade or prepackaged
- 1 tbsp white miso paste
- a few cubes tofu (silken is best; medium-firm works too)
- 1 green onion, finely chopped
- 1 strip dried nori (seaweed), torn up
Method
- 1
Cut up the tofu, finely chop the green onion and tear up a strip of dried nori.
- 2
Bring the dashi to a boil, then turn off the heat.
- 3
Break down the miso paste into the dashi. Do not boil the mixture once the miso is in, it loses its nutrients at boiling temperature.
- 4
Serve in a bowl and add the tofu, green onion and nori. Look at these lovely clouds.
