Mini Dutch Cherry Cheesecakes
This is an easy mini dutch cherry cheesecake, the ramekin version of the Dutch classic. A smashed-biscuit base, a whipped MonChou cream cheese filling, cherries in thickened sauce on top, and an hour in the fridge. You have to make this.
Ingredients
- a good nub butter
- 6 biscuits, smashed to dust
- 25 ml whipping cream
- 10 g vanilla sugar
- 1 pack Dutch MonChou cream cheese
- 1/2 tbsp caster sugar
- a layer cherries in thickened sauce
Method

Grab two ramekins. Melt a good nub of butter, about 30 seconds in the microwave.

Smash six biscuits to dust, mix with the butter and press into the ramekins as the base.

Whip up the whipping cream with the vanilla sugar.

Mix the MonChou cream cheese with the caster sugar, then softly combine it with the whipped cream.

Add the mixture to the ramekins on top of the base.

Top with cherries in thickened sauce and cool for at least an hour.
