Hummus from Dried Chickpeas

Hummus out of a can works, but you get a much better result if you use dried chickpeas and soak them the night before. This is the base I use for the mango chutney coconut hummus.
Ingredients
- 400 g (cooked) chickpeas, from dried
- 1 tsp baking soda
- 2 cloves garlic
- 3 tbsp tahini
- 2 tbsp lemon juice
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 3 tbsp aquafaba (the chickpea cooking water)
- 10 cracks salt and pepper
Method

Soak the dried chickpeas the night before, around 12 hours in cold water.

Throw them in a pan with the same water and a teaspoon of baking soda, and cook them for 45 minutes to an hour.

Drain the chickpeas in a mesh strainer, keep some of that magical aquafaba.

Grab your food processor and add the 400 g of chickpeas, garlic, tahini, lemon juice, salt and pepper, cumin, chili powder and the aquafaba. Blend.
