The Healthy Homemade Granola I Eat Every Day
This healthy homemade granola recipe is one of the two breakfasts I alternate between and eat every day. I got it from my girlfriend, and the first time I tried it, it was a hundred times better than any cereal from the store I was eating before. No white sugar in it, and it's vegan. I'll also give you the formula behind a good granola so you can play around and make your own version.
Ingredients
- 500 g rolled oats (do NOT buy the broken-up oats, it will taste like sawdust)
- 300 g cranberry nut mix, cut into smaller chunks
- 125 g seed mix (I use pumpkin, sunflower, pine nuts and flax seeds; sometimes chia)
- 65 g dates, cut up bite-size
- 150 g dried raisins
- 50 g coconut flakes, crushed a bit
- 3 tbsp cinnamon
- 3 tbsp koek- en speculaaskruiden (Dutch mixed spice for spiced cookies, make it yourself if you can't find it)
- a pinch salt
- 90 ml coconut oil
- 80 ml maple syrup
- 2 tbsp water

Preheat the oven to 180°C on hot air with the broiler/grill on. Weigh all your ingredients beforehand, it makes putting this together much easier.

Soak the raisins in cold water in a small bowl so they get nice and puffy.

Cut the cranberry nut mix into smaller chunks, crush the coconut flakes a bit, and cut up the dates, everything nicely bite-size.

In a large bowl, combine the rolled oats, cranberry nut mix, seed mix and dates.

Add the spices: a pinch of salt, the cinnamon and the speculaas spice mix. Stir everything together.

Heat the coconut oil and maple syrup in a small pan, add the 2 tbsp water, and pour the liquid over the dry ingredients. Stir, the granola should get a nice glossy texture. If it doesn't, make a third more of the liquid and pour that in too.

Spread the granola over two baking sheets lined with baking paper (I use silicone baking mats, my favorite oven utensil, dishwasher-safe, reusable forever).

Into the oven for 20 minutes, but set a timer for 10: at the halfway point, stir the granola around and swap the two sheets so the broiler gives the other one some love too.

Take them out and let them cool. Drain the raisins and mix them in, along with the coconut flakes, these go in afterwards, otherwise they burn in the oven.

Store in an airtight container for up to a month, or freeze in ziplock bags to stretch the shelf life.
