Easy Chicken Pesto Pasta
Every Friday I make an easy Few Ingredients Friday recipe, this one is easy chicken pesto pasta. I used orecchiette, but you can use whatever pasta you like.
Ingredients
- pasta of your choice (I used orecchiette)
- some olive oil
- chicken thighs, sliced
- 3 tbsp pesto
- 400 g spinach, sautéed
- some minced garlic
- 10 cherry tomatoes, sliced in half
- 125 g crème fraîche
- a splash pasta water
- to taste salt and pepper
Method

Boil water with some salt and cook the pasta according to the time on the package. Once done, drain and set aside.

In a large pan, put in some olive oil and the sliced chicken thighs. Cook the chicken until it gets some brown spots.

Add the 3 tablespoons of pesto.

Add the 400 g sautéed spinach, mixed with some minced garlic.

Add the 10 halved cherry tomatoes and the 125 g crème fraîche.

Add a splash of pasta water to bind the sauce together.

Throw in your pasta, season with salt and pepper to taste, mix and serve.
