Beef & Pepper Quesadilla
Hungry? Try this beef and pepper quesadilla, a quick pan filling, a mix of grated cheeses, a homemade flour tortilla, and a little dipping sauce on the side. Rule of the house: always double the cheese.
Ingredients
- a few spoonfuls sour cream
- a pinch garlic powder
- a pinch salt
- 1 onion, sliced
- a portion beef
- a good handful a few different cheeses, grated
- 1 flour tortilla (homemade)
- a glug olive oil, for the pan
- 2 peppers, sliced
- to taste salt and pepper
Method

Mix the dipping sauce: sour cream, garlic powder, and salt.

Slice the peppers and onion, and grate a few different cheeses.

Heat olive oil in a pan, add the onion, and stir for one minute.

Add the peppers and stir for another minute, then add a quarter of your cheese.

Make room in the pan for the beef, add it, season with salt and pepper, cook it through, and set the filling aside.

Put the pan back on the stove with some olive oil. Lay in the tortilla and put cheese on one side.

Add the beef mixture and double the cheese, always double the cheese.

Fold the quesadilla closed, press down, then flip. Serve with the dipping sauce.
