Air Fryer Meal Prep: Flank Steak and Peppers
This is my most popular healthy variety air fryer meal prep hack, built for maximum speed, perfect for when you don't have a lot of time to cook in the week. One flank steak, colorful peppers, 40 minutes, and the fridge is stocked.
Ingredients
- 1 onion, sliced
- a spray olive oil
- your pick spices for the veggies
- 1 flank steak
- to serve rice or a wrap
- a spread cream cheese
- a squeeze lime juice
- a handful (optional) spinach, for extra power
- a few colorful bell peppers, sliced into strips
- a sprinkle salt and pepper
Method

Slice the bell peppers into strips and slice the onion. Spray with olive oil and spice it up.

Spray the flank steak with oil and hit it with salt and pepper.

Add it all to the air fryer for 40 minutes at 190°C (375°F). If your air fryer has a thermometer probe, stick it in and pull the steak at an internal 54°C (130°F) for perfect doneness.

When done, slice the steak, mix it with the veggies and store it in the fridge for the coming week.

When ready to eat: pick your carbs (rice or a wrap), and heat a container of the prep, wrap included, for 4 minutes at 180°C (355°F).

Spread some cream cheese, finish with lime juice and optional spinach.
